This innovation brings a familiar, contemporary presentation style to the table. The familiar techniques can make unfamiliar flavors easier to approach for first-timers. Therefore, it is the perfect bridge for travelers or first-timers to explore local culinary traditions
Meet Chef Peter and the New Culinary Concept at Jendela Bali
Jendela Bali officially introduces a new direction under Chef Peter with his philosophy: “Tradition with Innovation.” Chef Peter presents a menu transformation from traditional cuisine to Indonesian Fusion concept. This innovative move is designed to present a more modern dining experience, while maintaining the rich flavors of Indonesia. Indonesian fusion food was first introduced on the 26 June 2026 Jendela Bali re-launch. The re-launch event featured cooking demo by Chef Peter himself accompanied by live music. During the cooking demo, Chef Peter introduced three dishes: Iga Bakar Dewata, Ayam Pop with Coconut Curry Sauce, Udang Bakar Jimbaran Style with Miso Butter Sauce (an Indonesian-Japanese example). Building on these creations, Jendela Bali plans to introduce more innovative fusion food in the future. Some of these dishes include the three must-try fusion food: Smoked Duck Spring Roll, Barramundi Tuturuga, and Klappertart Pavlova.
The Three Indonesian Fusion Dishes to Try at Jendela Bali
- Smoked Duck Spring Roll (Starter)

Smoked Duck Spring Roll is a perfect appetizer to start your meal. This dish is a combination of Indonesian smoked duck and Vietnamese spring rolls that creates a rich, savory, and crispy flavor. It is also topped with Dabu-Dabu Gel and Kemangi Oil to add an intensely vibrant, contrasting flavor profile
- Barramundi Tuturuga (Main Course)

Continue your Indonesian fusion food journey with Barramundi Tuturuga. This dish consists of barramundi fillets served the rich, aromatic, and coconut-milk based Tuturuga Sauce from Madano, North Sulawesi. In its creation, the fillet is glazed with Japanese Miso Butter to create umami, creamy taste.
- Klappertart Pavlova (Dessert)

This is a dessert that combines the Dutch-influenced Indonesian cake klappertaart and Australian/New Zealand pavlova. It offers a tropical fusion of a creamy Indo-Dutch coconut custard and a crisp, marshmallow-soft meringue shell.
